Food for Today, Vegan & Vegetarian Recipes by Karen Austin


Food for today is a wonderful collection of recipes inspired by Karen Austin's garden and her travels, for every day eating and baking.

The recipes are both vegetarian and vegan, mostly with alternatives each way.

Karen draws much inspiration for her food from the produce of the walled garden of Lettercollum House in Timoleague, Co. Cork that she cultivates with her partner Con McLoughlin, taking those vegetables and cooking them with flavours from countries she has visited. A vegetarian for more than 40 years, except for “just the odd bit of fish and chorizo,” Austin wrote Food For Today for vegetarians and vegans, including options for those on gluten-free and dairy-free diets
